Dibbi is one of the first sights tourists see as they arrive in The Gambia. As the bus takes them from the airport, on the roadside (especially the old road that went through Serrekunda) they would see street-sellers making Dibbi. Dibbi is the Gambian version of the kebab.
500 grams beef, cubes
5 onions, cut into chunks
2 tablespoons vinegar
1 tablespoon black pepper
1 teaspoon kani, finely chopped
1 clove garlic, finely chopped
1 tomato, finely chopped
2 tablespoons peanut oil
1. Mix all the ingredients except the onions in a large bowl, ensuring the meat is thoroughly covered.
2. Marinate overnight.
3. Put the meat and onions on the skewers, alternating them.
4. Grill on a wood or coal fire until the meat is well done.
5. Serve with bread, sprinkled with Maggi
